THE SPICE ROUTE ~ South-East Asian Restaurant & Courtyard

Heralded as one of the top ten restaurants in the world by Condé Nast Traveler, The Spice Route is poetry in design. The renowned restaurant mesmerizes all your senses enrapturing you with its sensuous exotica.Designed by Rajeev Sethi, the celebrated cultural czar of India, The Spice Route reflects the journey of spices from the Malabar Coast in Kerala through Sri Lanka, Myanmar, Malaysia, and Indonesia to Thailand and Vietnam. The restaurant is an overwhelming visual depiction of the art and culture that travelled with the spices through these regions, presented in a folk, religious and cultural fantasy of the Orient. The Restaurant, that was seven years in the making, is completely hand painted with vegetable and flower dyes by mural painters brought in especially from a temple in Guruvayur in Kerala with a tradition dating back to 3000 years.

Designed on the principles of Feng Shui, The Spice Route is a treasure trove of antiques and is divided into nine different sections, each depicting part of the journey of life. Besides the stunning décor, The Spice Route boasts a menu that ensnares the taste buds of a seasoned food connoisseur. Orchestrated with passion by Chef Veena Arora, the menu crafted almost artistically is starred by gems such as Chemeen Thoren (Kerala style prawns, stir-fried with coconut, curry leaves and black tamarind; flavoured with mustard seeds), Tom Yum Kung (the famous Thai soup with prawns, flavoured with lemon grass, lemon leaves and galangal), Kung Nang Phad Khing (Stir-fried lobster with ginger and Thai black mushrooms, served in the shell), Kaeng Kheow Waan Kai (Chicken in Thai green curry with pea and cherry aubergines) and Phad Phak (Chef’s special stir-fried baby pok-choy with black mushrooms, flavoured with soya bean paste).

The Spice Route Courtyard transports the guests to the wonderful world of Southeast Asia. Adorned with traditional Thai sculptures from the Chiang Mai region in northern Thailand, the Courtyard is a visual spectacle. A picture perfect water body with floating candles and thoughtfully strewn petals forms the center of the Courtyard. The far end of the pavilion has traditional Khantok seating for six under an Oriental pagoda.

1911 ~ Bar, The Hardinge Room, The Lutyens & Baker Room

1911 bar pays a tribute to this historic milestone that led to the emergence of New Delhi as a seat of power. Soft Montana leather chairs, period portraiture, stained glass roof and wood panelling add an element of high gloss to the 1911 Bar offering over 500 varieties of beverages with lounge and club music playing to your mood. It boasts of two stunning private rooms the ‘Hardinge Room’ and the ‘Lutyens & Baker Room.’

The walls in the Hardinge Room are adorned with pictures of uniforms and attires of various battalions during British Raj and the most coveted VICTORIA CROSS the highest gallantry award in the British Army, the one and only existing in the city.

1911 ~ All Day Dining Restaurant & Verandah Lounge

1911 is a landmark year in the history of New Delhi. In December 1911, King Emperor George V had declared New Delhi as the Capital of India and laid the foundation of New Delhi. 1911 pays a tribute to this historic milestone that led to the emergence of New Delhi as a seat of power. Given the historical significance it compliments, 1911 is a celebration of aesthetics with its rich interiors and cuisine that showcases the ‘melting pot’ culture of Delhi and service that is truly a reflection of Imperial India.

The Imperial, has for long, had a ‘relationship’ with period art. In fact, 1911 is an ode to this tradition. It is replete with antiquities dating back to the 1911 Durbar, etchings of ink, stipple, lithographs, tints (mezzo and aqua), and photographs from the colonial era and candle stands that have an image of The Imperial crown.

Spread over 3 areas – the 1911 restaurant and Verandah Lounge, which overlooks The Imperial lawns the decor is set in rich mahogany and inspired by the understated grandeur of the Art Deco era.

SAN GIMIGNANO ~Italian Restaurant & Alfresco Dining

Tuscany, in the heart of Italy, is known the world over for its art, history, cuisines and beautiful landscapes. Cradled in the bosom of Tuscany lies a hilltop town, one of the best – preserved medieval towns, called San Gimignano or ‘the city of beautiful towers’. The Imperial’s Italian specialty restaurant of the same name takes inspiration from this lovely city where vineyards and olive grooves flourish.

San Gimignano offers a delectable fare blending the delicate flavours of ingredients that are both procured locally and imported from Italy. In an endeavour to present only the best, San Gimignano sources the finest of balsamic vinegar, cheeses, pasta, risotto and olive oils.

The restaurant boasts a premium selection of Italian wines and grappa that are a perfect match to the thoughtfully created menu. Specially selected wines, wines by the glass, San Gimignano’s very own ‘Vernaccia de San Gimignano’ produced by a centuries – old traditional method in an old winery called La Gentilesca and a divine cuisine like Parmesean cheese soup, stuffed Calamari, Roasted lamb in black olive crust make San Gimignano a every day dining place in a romantic and relaxed setting.

DANIELL’S TAVERN ~ Pan Indian Restaurant

In 1786 Thomas and William Daniell (an uncle-nephew team) arrived in India to paint the unrivalled scenery and architecture of th country. Daniell’s Tavern, The Imperial’s colonial hangover, relives the journey of the Daniells as they set about experiencing the rich culture and culinary tradition of this ancient land.

Daniell’s Tavern traces Thomas and William Daniell’s footsteps on a gastronomic journey through each of the places they visited. Interestingly, some of the recipes have been taken out of the diaries of the Daniells. The menu showcases dishes such as Peshawari Kebab, Phaldari Kebab, Jheenga Chettinad, Khyber Murgh, Gosht-E-Awadh, Aishbagh Korma, Dhingri Dolma and the famous Dum ki Biryani.

The menu attempts to recreate the grand tradition of regional cuisine prevalent in India in that period.
The restaurant showcases original lithographs by the Daniells. Noteworthy among them is the lithograph of the Jantar Mantar monument painted from the exact spot where the Daniell’s Tavern stands today.

PATIALA PEG ~ Polo Bar

Patiala Peg, one of the most popular bars in Delhi lives up to its name, which indicates larger measure of 75 ml pegs instead of the usual 60 ml.
As the legend goes, the Bar commemorates an exciting tent pegging encounter that took place in the early 1900s between the Viceroy’s team and the team of the Maharaja of Patiala. The Bar has a remarkable collection of photographs of the Maharaja of Patiala during the Second World War.

LA BAGUETTE ~ The Pattiserie

La Baguette, the pastry shop situated at the common entrance to the Royal Ballroom and 1911, tempts the inveterate sweet tooth with its enviable range of goodies. For those who want to indulge in sweet sin, La Baguette is a perfect haunt with its wide range of gateaux, bread, chocolate, sunrise and teatime eats and patisseries, promises to ensnare the taste buds of the discerning connoisseur.

The pastries have been thoughtfully crafted after going through various recipes from all over Europe. The wide variety of delectable desserts from the simple black forest cake to the traditional Napoleon pastry has unique artistic designs apart from being rich in taste.
