Le Pur’

After twenty years in such esteemed establishments such as Taillevent, Le Crillon, La Cantine des Gourmets and most recently Les Muses, Chef Jean-François Rouquette has taken up a new challenge.

Pur’ opens onto a vast rotunda with a modern peristyle that is quite unexpected in such a contemporary setting. The energy of the open plan kitchen, the aromas from the grill, and the vivacity of the young staff make this refined Michelin Paris restaurant a theatre of unusual tastes. The soft-hued and cosy atmosphere, with mahogany walls adorned with vivid China ink sketches by acclaimed artist Viswanadhan, is the setting for a symphony of flavours.

When entering the restaurant, guests are led down a small gallery path shadowed by a six-meter ‘wine wall’ that not only serves as the hotel’s cellar, but also as a cigar and cheese cabinet.

Honoured with its first Michelin Star, Pur’ Paris offers an innovative gastronomic style in which simplicity becomes synonymous with purity and refinement.

The Chef’s Table

Pur’ restaurant Paris at Park Hyatt Paris-Vendôme delights diners with The Chef’s Table, conceived by the hotel’s head chef, Jean-François Rouquette.

Overlooking Pur’s spectacular open-plan kitchen in a modern setting that radiates simplicity, The Chef’s Table caters to from four to eight guests who are welcome to select from the restaurant’s innovative menu or design the meal themselves prior to the evening. The dining experience is complemented by “Grande Cuvée” and “Krug Vintage” champagnes, along with one wine per dish.

As the evening begins, a Thai chenille curtain is drawn for privacy. The porcelain dinnerware signed by Jaune de Chrome, original contemporary silverware, and fine Riedel glassware offer a touch of sophistication, but the evening’s crowning glory is the cuisine itself. Featuring the finest locally sourced ingredients, it is a loving homage to the art of living the French way, as expressed by Jean-François Rouquette.

Dinner at The Chef’s Table is priced at €300 per person and a minimum of four people is required.

Le Bar

This Paris bar is the perfect blend of sophistication and casual cosiness. Sleek black-glass tables with bronze trim cultivate a sense of contemporary elegance. Twin Granet candelabras serve as playful bookends on the limestone bar, with the vivid artwork of abstract expressionist Ed Paschke providing occasional moments of colour against the dark mahogany walls.

Le Bar Paris serves a variety of refreshments, including nine champagnes “à la coupe” and more than 70 whiskies. There are also creative cocktails with fanciful names like the Framboise Collins, the Iceberg or the Chocolate Bisquit, served with tapas created by Executive Chef Jean François Rouquette.
