Gastronomy & Bar

Dinner at Restaurant Vinkeles

Restaurant Vinkeles is a destination unto itself. Awarded a Michelin star in November 2009, the delicate French cuisine offers an excellent mixture between classic and contemporary styles. Set in a sunken dining room surrounded by original 18th century ovens that once served as a bakery for the Catholic Poor Peoples Office with views overlooking the garden, the restaurant offers an intimate and elegant setting blending the old world of Authentic Amsterdam with the new, refined style of today.

Executive Chef Kuipers uses only the freshest ingredients for his seasonal MENU, which showcases his strict dedication to purity of flavor and presentation. Described by the guests as “exciting, modest and refined”. Restaurant Vinkeles and Executive Chef Kuipers are an element to the Dylan that must not be missed.

Vinkeles on the water

Our private landing dock located on the Keizersgracht marks the beginning of The Dylan Amsterdam’s new signature concept; Vinkeles on the Water.Enjoy the exquisite dishes of restaurant Vinkeles, prepared on the spot in a ‘live cooking session’ on board ‘The Muze’, a completely renovated 19th century wooden salon boat. Whilst roaming Amsterdam’s numerous canals, the Michelin awarded dishes will be served to you and your guests at the on-board ‘Chef’s Table’.

Bar & Lounge

Bar Barbou, the Lounge and the Long Gallery are open for drinks, lunch and ‘brasserie style’ dinner daily between 11 am and 11 pm.

Bar Barbou

“small enough for personal attention, large enough for privacy and just right when it comes to refreshing cocktails”

Long Gallery Lounge

“Subtle coloration with a modern accent, the long gallery is ideal for coffee in the morning, lunch or drinks in the afternoon”

Lounge

“Get together near the fireplace in The Dylan’s livingroom”

The Garden

“Lit with candles and warmed by heat lamps when needed, the garden is the secluded spot you’ve been looking for complete with a tempting Brasserie style “Lounge menu” for lunch and dinner.”

When the weather allows the garden is the perfect location to enjoy a cocktail or The Dylan’s Signature concept High Wine.

High Wine

Here at The Dylan we like to consider the decadent affair as Bacchus would see fit, with a selection of our finest wines from the cellar and savory bites selected by our executive chef Dennis Kuipers.

Available every day between 3 p.m. and 7 p.m., High Wine features a selection of 4 different wines and 4 different amuse style bites per person for € 39,50.

On Board Catering

Ask any Amsterdammer, the best way to glimpse the true beauty of Amsterdam is from a boat ride through the canals.Unlike roaming the streets, or even renting a bicycle to blend with the locals, the perspective gained from a boat ride through the canals offers unique insight into both the past and present of the city – its fascinating construction and its remarkably compact design.
